Water Street Waffle Company was founded in December 2019 by Bobbi and Jeff Seger, who opened the original location in historic downtown Belton, Texas. Their goal was simple: create a welcoming, family-centered restaurant serving fresh, from-scratch breakfast and brunch favorites. Supported by their two daughters, the restaurant quickly became a local favorite, built on consistency, care, and community values—principles that continue to guide each new location, including New London.
